I discovered this simple and delicious recipe in my grade 7 foods class; since our classes weren’t very long and many of us were lacking in our cooking and baking skills, our teacher would make it her job to find yummy recipes that we could easily make. This banana chocolate chip muffin recipe had to be one of my all time favorites! I have kept the recipe over the years and often find myself resorting to it when my family has company over or I am in the mood to bake and eat a yummy treat.
In the past I have made these muffins with many of my family members and friends; everyone really enjoyed the experience and I have to admit it was pretty fun to explain how to make them and watch over my little cousins as they mixed the batter and poured it into the muffin tins. Of course, every time I make these I have to remember to set a few aside for my dad because he loves them so much!
The first few times I made this recipe I made regular sized muffins, which worked well for breakfast and a larger snack during the day. At one of my volleyball tournaments my family and I were in charge of the lunches and snacks for my entire team. We were all a bit overwhelmed and when we were trying to come up with a good snack idea the muffins seemed like the obvious choice, the only problem was that they were a bit to heavy to eat before a game. So my mom came up with the brilliant idea to make mini muffins; they were the perfect size and super cute! I even got mini muffin cups at the grocery store that were my team colours so that I could demonstrate my team spirit! They were a hit with my team mates and every one thought I was some sort of gourmet chef (I left out how simple the recipe actually was).
